The Protein Digestibility Corrected Amino Acid Score (PDCAAS) is used to measure these factors. While beef’s PDCAAS is 0.92, mycoprotein’s score is 0.996. This score is very similar to milk, one of the foods with the highest bioavailability, and even higher than meat.
