  • 80g Revo Smoked Salmon
  • 525g plain flour
  • 1 tbsp sugar
  • ½ tsp salt
  • 1 tsp dry yeast
  • 50 ml almond milk
  • 100 ml warm water
  • 1 tbsp sunflower oil, plus extra for brushing
  • 1 tbsp rice vinegar
  • 1 tsp baking powder
  • 1 small cucumber
  • 1 spring onion
  • 1 avocado
  • Red cabbage
  • Spinach
  • Fresh coriander
  • Chilli
  • Hoisin sauce


  • 1 Mix together flour, baking powder, and ½ tsp salt in a large bowl.
  • 2 Dissolve yeast and sugar in warm water, then add it to the flour with milk, sunflower oil, and rice vinegar.
  • 3 Mix into a dough, adding a little extra water if needed.
  • 4 Tip the dough onto a lightly floured work surface and knead for 10-15 minutes until smooth.
  • 5 Put the dough in a lightly oiled bowl, cover with a damp cloth, and leave to rise until doubled in size.
  • 6 Place the raised dough on a working surface. Roll out the dough 1/4-inch thick.
  • 7 Cut the dough into a 3 1/2-inch circle with a ring, mold, or glass.
  • 8 Lightly brush or spray oil on one surface of the baos and fold in half like a half-moon shape.
  • 9 Gently press each bao with a roller and place it on a parchment paper or coffee filter-lined steamer.
  • 10 Bring water to boil in a pan or steamer pot.
  • 11 Place the baos in the pot and steam them for 8-10 minutes.
  • 12 Prise open each bun and fill it with our Revo Salmon and vegetables of your choice.
