THE FILET – Inspired by Salmon is simmered in sweet and creamy coconut milk, seasoned with fragrant Indian spices. That’s all there to make this delicious recipe.
1Heat the pan up with oil. Add ginger, and garlic paste, and sauté for 30 seconds. Add sliced onions, zucchini and bell peppers. Sauté for a minute.
2Add the spices and coconut milk. Stir well and sauté for 30 seconds. Add coconut milk and mix well. Bring it to a simmer, for about a minute, this prevents the coconut milk from curdling under pressure.
3In the meantime cut THE FILET into small cubes and fry them.
4Add THE FILET pieces, and a few mint leaves and stir well to coat THE FILET with coconut milk.
5Finish the curry with a light squeeze of lime (or lemon) and serve.
