Ingredients

  • 200g soba noodles
  • 100g snow peas
  • 100g edamame (shelled)
  • 1 small bunch asparagus
  • 1 small bunch broccolini
  • one generous handful of baby spinach
  • one spring onion diced
  • Optional garnishes -toasted sesame seeds
  • 1 tablespoon sesame oil
  • 4 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon finely chopped ginger
  • 1 cloves garlic finely minced

Preparation

  • 1 Bring a large pot of salted water to boil for the pasta and cook pasta according to directions.
  • 2 Make the Ginger dressing by stirring the ingredients together in a bowl.
  • 3 During the last couple minutes of cooking the pasta, add any veggies that need a quick blanching directly into the boiling pasta water (broccolini, asparagus, green beans snow peas, edamame) for 1-2 minutes, until they turn bright green - do not overcook!
  • 4 Drain well and place in a large bowl. Pour dressing on top and add the Revo smoked salmon and baby spinach. Mix everything together well. Add in the spring onion.
  • 5 Serve in bowl with optional garnishes.
